Ninja Speedi Bulgur Pilaf with Chicken
Equipment
- 1 Ninja Speedi it will also work in the Ninjas with Smartlid like the 14 in 1 or 15 in 1
Ingredients
Bulgur Pilaf
- 1 teaspoon extra virgin olive oil
- ½ brown onion chopped
- ¼ yellow pepper chopped
- 2 cloves garlic chopped
- 1 tablespoon tomato purée heaped
- 150 g coarse bulgur wheat I didn’t rinse it but you can
- 350 ml water cold / room temperature
- ¼ teaspoon vegetable stock paste or bouillon heaped (vegetable stock paste recipe)
- 1 teaspoon oregano
Chicken
- 2 chicken thigh fillets pinch of salt, dash of olive oil, zest of a lime and juice of half a lime)
- ¼ teaspoon smoked paprika
- 1 dash extra virgin olive oil
- 1 pinch salt I tend to use sea salt or pink Himalayan salt
- 1 lime zested and juiced
- ¼ red onion sliced
Instructions
- Marinade the chicken in the ¼ teaspoon smoked paprika, 1 dash extra virgin olive oil, 1 pinch salt, 1 lime, ¼ red onion. You can do this on the spot when you're about to cook or a few hours or the day before even for extra flavour.
- Add 1 teaspoon extra virgin olive oil and Sauté the ½ brown onion, ¼ yellow pepper and 2 cloves garlic on Level 4 for a few minutes. I sauted for about 7 minutes. Stir regularly. Keep lid open
- Add 1 tablespoon tomato purée and mix well.
- Press Stop to cancel Sauté.
- Add the 150 g coarse bulgur wheat and stir well to mix.
- Stir in 350 ml water, ¼ teaspoon vegetable stock paste or bouillon and 1 teaspoon oregano.
- Place top shelf on and place the marinated chicken directly on it.
- Close the lid and set to Rapid Cooker setting (knob on the top right). Cook on Speedi Meals 190ºC for 10 minutes
- At the end remove the chicken and the shelf, stir the pilaf and let it sit for a bit to steam up any excess liquid or use Sauté level 4 for a few minutes. Serve immediately or eat cold the next day for an easy lunch (or both).
Can I double this recipe?
Yes, absolutely, I've done it several times and it works out great. As it's great cold, it makes a great packed lunch or perfect for picnics too.
How to serve
The bulgur pilaf and the chicken work great together.
But you can also eat them separately.
And fantastic cold the next day as is or as part of a salad.
In the photos below you see how I turned both the pilaf and the chicken together and separately into salads with leaves, coriander.
It means you can stretch it further.
Storage
Store in the fridge for up to 3 days.
Eat hot or cold.
I haven't tried freezing the bulgur wheat but the chicken will freeze great.
