These Pesto Mozzarella Pitta Pockets are an easy Air Fryer lunch, snack or savoury breakfast to make in your Ninja CRISPi. Fresh parsley adds a delicious herby flavour.
These pita melts are really quick to make, giving you just enough time to make a nice cuppa while they air fry. Ready in 10 minutes from the moment you open the fridge to the moment you sit down to eat.
Serve as is or with a salad for a more substantial meal.

The pittas I used were Warburton's Soft Wholemeal Pittas from a Too Good to Go bag from the Co-op.

Want to make more than one pita pocket?
Use the large glass base of the Ninja CRISPi and you can do two at a time, you may need to increase the time slightly.

Ninja CRISPi Pesto Mozzarella Pitta Pockets - Air Fryer
Equipment
- 1 Ninja Crispi Air Fryer
Ingredients
Ingredients for 1 person (see instructions below for 2)
- 1 pitta bread white or wholewheat
- ½ ball fresh mozzarella pulled apart into chunks by hand
- 1 tablespoon red pesto or green if you prefer
- 4 sprigs fresh parsley leaves only unless you like the stems
Instructions
- Slice the pitta bread in half unless it's one like the one I used which is large and already sliced for easy access.
- Open the pita carefully to reveal the pocket inside and spread the pesto over one of the sides (inside) then add half of the mozzarella then the parsley on top of the mozzarella.
- Place the stuffed pita on its side on the crisper plate of the Ninja Crispi's small glass base.
- Air Fry function 4-5 minutes, flip once if you are around to do it. This will depend on how melted you like your mozzarella.Making two pittas? Use the large glass base, you may need to add 1-2 minutes air frying time.
