A really easy recipe, warm spices infuse these Instant Pot Baharat Mushrooms. A great vegetarian alternative to our popular Baharat Chicken recipe.
Make sure you make our Easy Baharat Spice Mix. You probably already have most, if not all, of the ingredients at home.

Instant Pot Baharat Mushrooms
Equipment
- 1 Pressure Cooker electric or stove-top, I use Instant Pot and Ninja Foodi
Ingredients
To pressure cook
- 250 g mushrooms sliced in chunky wedges
- 8 g coriander stalks chopped up small (hate coriander? use parsley, it works great too, we've tried it)
- 4 cloves garlic rather plump ones (5-6 if they are on the small side)
- 1 tablespoon extra virgin olive oil
- 1 lemon, zested
- ½ lemon, juiced we'll use the other half to serve
- 1 teaspoon Baharat Spice Mix use our super easy Baharat Spice Mix
- ¼ teaspoon sea salt or pink Himalayan Salt, reduce or increase according to taste at the end, you can skip the salt until the end and try and see how much you want to add then
- A few twists of the black pepper mill
To serve
- ½ lemon, juiced
- 10 g fresh coriander chopped but left fairly big (hate coriander? use parsley)
Instructions
- Add all the ingredients go the inner pot. Stir to mix well. Now may be a good time to check why this recipe works great without added water (just read the blurb above or the notes section of this recipe card).
- Make sure the sealing ring is properly in place before locking the lid in (and the rim of the cooker free of debris) and the steam release sealed.
- Pressure cook on high pressure for 3 minutes, 3 minute quick pressure release (this means manually releasing the steam trapped inside 3 minutes after it finishes pressure cooking, don't worry if it's not 3 minutes exactly).
Notes
How can it pressure cook with no added liquid?
Very good question!
It works in the pressure cooker without added liquid because mushrooms release a lot of liquid as they cook so that means the cooker is able to reach pressure. We already tried this method successfully in our Pressure Cooker Garlic Mushrooms (Spanish Setas al Ajillo) and, of course, in our Baharat Chicken.

How to serve Baharat Mushrooms
It's phenomenal as a side dish, as an appetiser and even on toast.. picture it on sourdough or on a toasted bagel.
You could serve it with rice, with quinoa, with orzo, with flatbreads, with a big dollop of yoghurt... You choose.
