As you may know I love cooking gammon, I tend to cook it with plenty of stock so I have leftovers for this Instant Pot Gammon Rice.
In fact, the little Tapita insists I do!
She loves having some of the gammon the moment I get it out of the pot.

How to cook the gammon
This recipe uses leftover gammon and stock from cooking that gammon.

Other things you can cook with gammon leftovers

Of course, you can also use it in salads or in pasta dishes.
Think of it as a substitute for pancetta or bacon too.
Also, you can freeze the stock to use from frozen.
I tend to freeze it in amounts I know I'll use, so either 400 ml or 800 ml for risotto as those are my key amounts.
The stock is also perfect for freezing in ice cube trays, then pop the ice cubes out when frozen and store in bags to add favours (from frozen) to dishes.
Gammon / ham stock adds lovely flavour to dishes.
Air Fryer Lid
The Instant Pot Duo Crisp comes with a very cool (or hot) Air Fryer Lid.
The cooker itself controls the air fryer lid so there are no added fiddly cables.
It's a very nifty design with a protective cover that protects both your kitchen counter when it's hot and the lid itself when it's stored.
And yes you can buy it in the UK / Europe now!

Instant Pot Gammon Rice
Serves 4. You can halve it or double it. Timings remain the same but you have to be mindful of the filling rules

Ingredients
- 1 teaspoon extra virgin olive oil, or oil of your choice
- 1 onion, chopped
- 1 small-medium carrot, chopped
- 3 cloves garlic, chopped
- Half a stalk of celery, finely chopped
- Dash of red/white wine, about 20 ml (optional, can use some of the stock)
- 300 g arborio rice
- 800 ml gammon stock
- Gammon leftovers, diced. About 100 g, don’t worry if you have less, add what you’ve got, it all contributes to the flavour. Need to cook your gammon? Check out how to here
- Approx 80 g extra mature cheddar cheese, or cheese of your choice, grated
- A very big handful or two of grated cheese (I used mature cheddar as that’s what I always have at home)
Method
Add the 1 teaspoon of oil to the inner pot. Press Sauté and set to Less. Add the chopped onion, carrot, garlic and celery and stir to coat in the oil. Put the glass lid on and let it sauté for a few minutes.
Stir in a dash of red wine or about 20 ml of stock.
Add the rice.
Stir well.
After 1-2 minutes, add the stock. As it’s gammon stock, don’t add any salt just yet.
Make sure the sealing ring is in and well pressed down. Lock the lid in. Steam release handle point to Sealing, unless you have a self-sealing lid (how cool are they?).
Press Pressure Cook / Manual and programme 5 minutes.
When pressure cooking time is over do a quick pressure release. Looking good!
Stir in the diced ham, check to see if it needs any salt.
Duo Crisp Users
At the end, stir in the ham, quickly scrape the walls down with a silicone spatula.
Sprinkle the cheese.
Put the Air Fryer Lid on. Pressing down to make sure it connects well.
Press Broil, 204°C, in total I did 8 minutes. 4 minutes and checked. Added 2 minutes and checked again. Another 2 minutes and it was perfect.
If you don't have the air fryer lid, either stir the cheese at the end (which is what I used to do before the air fryer lid came along or put under the grill or in the oven).

Scrumptious. Exchanged the gammon for leftover spiced pork loin. Used white wine stock instead of gammon stock and red wine.

This dish is delicious. The only struggle is to hold onto left over gammon from your gammon recipe one question though my instant pot/air fryer doesn’t have a broil option is it just the same as clicking air fry?

Yes, air fry on max temperature will do the same. Or use "Grill" if there's that option. Hope that helps Danny

Finally had a useable ham stock after my Christmas ham had a couple of days soaking time before cooking it. I added sweetcorn and peas but this was delicious!
