This Thermomix Chocolate Banana Ice Cream is so healthy that it's good for you.

No sugar.

It counts as fruit because it is fruit....

And it looks like chocolate ice cream, doesn’t it?

Thermomix Chocolate Banana Ice Cream

Yes, chocolate ice cream made with bananas.

The only effort you really need to put in is making sure you freeze the bananas ahead.

In this house bananas are a bit like bread crumbs.

See a banana going a bit ripe?

Stick it in the banana bag in the freezer.

The bananas actually snap off each other really easily so you don't have to use the whole bag every time.

Just use what you need or make a big batch and stick in the freezer.

We do the same with bread before it goes off.

But with bread, we first blitz it then add it to the bag of bread crumbs, you can then use them from frozen.

I’ve been making this Chocolate Banana Ice Cream in the Thermomix for T for many years.

I’ll always remember afternoon after afternoon sitting on the patio in the summer, eating this together when she was tiny.

It was more of a soft-serve back then as I would make it on the spot.

But now I make it ahead and put it in the freezer to have later.

In fact, 2-3 hours is enough for it to harden a fair bit to be able to scoop it out.

You can leave it in the freezer for days, the maximum I've left it has been a couple of weeks.

In these photos you can see my biggest batch yet, 690 g of frozen bananas.

It filled two plastic tubs!

Don't have a Thermomix?

Try blitzing it in your blender or food processor, it should work just fine!

To freeze the bananas

Always think of it as one banana per person.

Break each banana in 3-4 chunks so that you know how many chunks make a banana.

1 heaped tablespoon of cocoa powder or raw cacao powder per banana.

So, for every 3-4 chunks of banana you add 1 tablespoon of cocoa powder or raw cacao powder.

When using cocoa powder I tend to choose Green and Black's.

Optional

This is something we've started doing in the last few months because there is a Dark Chocolate and Rose water Jack's Gelato that T loves:

1 tablespoon rose water per banana, I use the Steenbergs brand.

No, it doesn’t taste like Turkish Delight.

In fact, I do not like Turkish delight but I love rose water in this ice cream.

Other ingredients you could add

What else could you add?

Chocolate chips?

Raw Cacao Nibs?

Do them in reverse for a few seconds at the end.

Method

1.

Step 1 - Frozen banana and cocoa powder in the Thermomix bowl ready to blend

Place the bananas (try to snap the chunks away from each other so that you can place them around the blades) and cocoa powder in the bowl: 2 seconds on Turbo. Scrape down

Step 1 - After a couple of seconds on turbo

Add the rose water if using: 30 seconds speed 10.

Step 2. After the first 30 seconds at full speed

Scrape down. I like using a silicone spatula for this.

Step 3. After the second 30 seconds on full speed

Step 4. after another 30 seconds on full speed
Almost there, this was a big batch!

5.

30 seconds speed 10. Scrape down. Once it looks like this, it's done! Of course, it may not quite get the swirl if you are using a small amount and it doesn't quite cover the blades.

Step 5. How it should look at the end

Important tips

The amount of times you need to do bursts of 30 seconds will depend on contents.

Always do the 2 seconds on Turbo then bursts of 30 seconds on speed 10, scraping down in between until it looks like in the photo above.

Then either eat as a bit of a soft serve or transfer to tubs in the freezer for a few hours (or days) for more of an ice cream consistency that you can scoop out.

I sometimes freeze in individual containers too (portion control but also what can I fit in the freezer control!).

I do it in my Thermomix but you should be able to do it in a powerful blender too

Ingredients
  

  • 1 frozen banana per person. To freeze your bananas best when they’re ripe: peel and break each into 3-4 chunks. Calculate 1 banana per person and that way you know to get 3 chunks per person. The maximum I have done has been 6-7 frozen bananas (690 g of frozen bananas)
  • 1 heaped tablespoon of cocoa powder or raw cacao powder per banana i.e. for every 3-4 chunks of banana you add 1 tablespoon
  • 1 tablespoon rose water per banana optional. No, it doesn’t taste like Turkish Delight (I do not like Turkish delight, in fact, but love it in this ice cream). My favourite to use is Steenbergs

Notes

My favourite Rose Water is by Steenbergs. I've tried the Nielsen Massey Rose Water but they seem to be made very differently and it doesn't work as well. Stick to Steenbergs or something produced without alcohols, which seems to be the biggest difference between my favourite Steenbergs and the Nielsen Massey (which has propylene glycol and ethanol).
I sometimes freeze in individual containers too, it works great.
I make it in my Thermomix but you should be able to do it in a powerful blender too
