    Gazpacho in the Thermomix - with or without Cucumber

    Wondering if you can make Gazpacho in the Thermomix with or without cucumber? Yes you can! I've been doing it since years as cucumber doesn't agree with me.

    Thermomix Gazpacho - with or without Cucumber

    Refreshing Spanish cold soup which you can just drink as if it was smoothie. Serve with lots of ice in a pretty glass for you or your guests. With the option to make it without cucumber

    Equipment

    • 1 Thermomix or blender

    Ingredients
      

    • 1 kg ripe tomatoes on the vine or beef tomatoes work well, quartered, no need to peel
    • 40 g onion
    • 40 g green pepper or red pepper if you don’t like green or how it makes your tummy feel after, I use red due to the latter
    • 1 clove garlic
    • 2 tablespoons balsamic vinegar
    • 4 tablespoons extra virgin olive oil 50 g, you can add less and even avoid altogether
    • 1 teaspoon sea salt
    • 10 cubes ice 150 g approx

    Want to add cucumber?

    • 40 g cucumber in chunks

    Instructions
     

    Thermomix Instructions

    • Add all ingredients to the Thermomix bowl: 30 seconds speed 5.
    • Then 3 minutes speed 10.

    Don’t have a thermomix?

    • Use your blender to blitz until smooth. You may find that you need to sieve it. You won't need to with the Thermomix as it'll blitz the whole tomato.
    • Serve chilled. Keeps nicely in the fridge for when you want some. You can serve it with ice cubes. At home it was never a soup that you eat with a spoon, you sip it really. Served in a bowl or a glass.

    Notes

    You can use any blender to blitz this delicious, refreshing gazpacho, go on try it! The more powerful the better, that's why I use the Thermomix

    Can you really make Gazpacho without the traditional cucumber?

    Yes, yes you can!!

    And, in fact, it's the only way I can have it.

    Hands up if cucumber doesn't agree with you... ✋

    So many people tell me cucumber doesn't smell or have any taste.

    Not true!

    And, not just that, it impregnates everything around it with that taste!

    As for digestion, I do not digest it well!

    Oh, and I'm Spanish so the purists can go cool themselves with their cucumbers somewhere else wink 😉

    Who else can't cope with cucumber?

    Ingredients

    We have established that the cucumber is optional and you can make your Thermomix Gazpacho - with or without Cucumber. So below is a photo of all their ingredients in their cucumberless glory!

    Tip: choose a GOOD extra virgin olive oil.

    Will this work with my blender / food processor?

    It's worth a go, the beauty of the Thermomix is that it's so powerful that there's no need to peel the tomatoes so, if yours isn't the most powerful in the world, make sure you blanch the tomatoes first by plunging them into boiling water for 15 seconds.

    How to store your Gazpacho

    Gazpacho is served chilled and stored in the fridge.

    I use old passata bottles like the ones you see in the photos. Give them a good wash, rinse and they're ready to slot in the fridge door. Passata jars are great for storing any blended soups and, also, homemade chicken stock, turkey crown broth too.

    It will last 2-3 days in the fridge. Although you'll probably drink it all before then.

    My Gazpacho has separated while in the fridge, is that normal?

    Yes, just give it a good shake before serving. Enjoy!

    In the summer, I use the Thermomix for drinks like Mango Lassi (including Thermomix instructions), desserts like Chocolate Banana Ice Cream (also known as a snack in my house!), picnic food like Cheesy Chorizo Crustless Quiche and Mixed Potato Salad with Red Chilli, Coriander and Feta.
