    Instant Pot Duo Crisp Tortilla Pizzas

    These Instant Pot Duo Crisp Tortilla Pizzas have become a lunch favourite here using the air fryer lid.

    With the little Tapita being home 24/7 the last few months and with her healthy appetite, lunchtimes have been interesting.

    The girl doesn't do sandwiches unless it's once in a blue moon.

    She doesn't really do pizza either.

    One lunchtime, mummy was a bit stuck and there were wraps and cheese and passata.

    So we tried something new.

    She loved it!

    Of course, she really only likes her Tortilla Pizzas Margherita style.

    Only cheese and tomato.

    Sometimes she will let me add some diced chorizo.

    I, however, load mine!

    What toppings will you choose?

    Here are some of the toppings we've done so far:

    This one was a sliced mushroom, diced gammon (pressure cooked in the Instant Pot, of course), olives, bit of green pepper....

    The beauty of these Tortilla Pizzas is that they take no time from thought to completion.

    How to air fry these tortilla pizzas

    1.

    Place the Duo Crisp's trivet / multi-functional rack in the inner pot using the higher setting. The video below shows you how.

    2.

    Press a tortilla wrap into 20 cm cake tin (metal will transfer heat better and you want this to be fast). Mine are just basic 20 cm cake pans, probably from Wilko, that I use for my cakes.

    Spread with Passata (I use the beautiful Cirio Passata Rustica), sprinkle cheese and your favourite toppings. Don’t overload it as it’s a thin base.

    4.

    Place the cake tin with the prepared tortilla pizza on the trivet / multi-functional rack.

    5.

    Crisp’s Air Fryer Lid on. Press Broil, programme 5 minutes. Don't forget to press Start!

    Lift lid quickly to check how it’s doing when there are 2 minutes left.

    It will give you an idea of whether you need to take it out before time is done or whether you need to increase time a bit.

    6.

    Take the cake pan out and grab two opposite sides of the tortilla wrap to carefully move your tortilla pizza to a plate.

    Bearing in mind it’s all going to be hot and the base is very thin, so you need a quick transfer.

    I haven’t had a single one break in the middle doing it like this.

    Dig in!

    We tend to cut a triangle like this and then just eat from there.

    Note:

    I have two cake pans that are exactly the same so we just have the next tortilla pizza ready to go in and so on.

    You can blind bake the tortilla wrap with baking beans, if blind baking make sure you do have those in place or something of weight as the tortilla will otherwise fly up obstructing the lid.

    But, having tried it both ways, blind baking is not worth the extra time

    • Instant Pot Duo Crisp

    Ingredients
      

    • Passata or pizza sauce enough to spread over the base, I use Cirio Passata Rustica
    • Cheese of your choice I tend to use mature cheddar

    Toppings of your choice, these are a few ideas

    • Chorizo
    • Ham or leftover gammon
    • Sliced onion or red onion
    • Sliced peppers
    • Sliced mushrooms

    Instructions
     

    • Place the Instant Pot Duo Crisp's trivet / multifunctional rack on the higher setting (see video above if you don't know how to do this).

    In the Instant Vortex Air Fryer

    • In the Instant Vortex Air Fryer, follow all the instructions as above but programme Air Fry, 4 minutes, 180ºC

    Notes

      I love these! I alternate between these and omelettes for lunch. Favourite fillings are pretty much anything you'd put on a pizza (including anchovies!) - had a glut of very ordinary pasta sauce from the Boris boxes and have been using a couple of spoons of that as a base - better than wasting it.
