    Instant Pot Duo Crisp Sweet Potato Fries

    It took a few tries, including in my old air fryer over the years, but I finally nailed Instant Pot Duo Crisp Sweet Potato Fries, with the Air Fryer Lid of course.

    I've tried all sorts of temperatures and times.

    I've tried semolina flour and corn flour.

    They were either mostly burnt or limp.

    I still ate them mind...

    This recipe uses the Instant Pot Duo Crisp's awesome Air Fryer Lid.

    The lid just pops on and doesn't need preheating.

    Once the lid is on, the Duo Crisp basically turns into an Air Fryer.

    Basically, a Mini Oven.

    You may be wondering...

    Do I need to soak the sweet potatoes?

    Yes, they work best if you soak them in cold water for a minimum of half an hour.

    They will shed the starch.

    It's best to soak them once they have been cut into sticks.

    Don't be tempted to just rinse them, soaking works best.

    Half an hour is the minimum soaking time but you can leave them longer, this means that you can prepare them earlier in the day, ready for when it's time to start cooking.

    Instant Pot Duo Crisp Sweet Potato Fries

    Equipment

    • Instant Pot Duo Crisp + Air Fryer

    Ingredients
      

    • 500 g sweet potatoes weight before peeling, sliced evenly, about 1 cm wide
    • 2 tablespoon corn flour corn starch for those of you in the United States
    • 1 teaspoon garlic granules
    • ¼ teaspoon smoked paprika or whatever paprika you have, I'm going to try ½ teaspoon next time
    • Salt and pepper to taste
    • 2 tablespoon olive oil

    Instructions
     

    Soak the potatoes

    • Soak the peeled and cut sweet potatoes in water for half an hour

    While the potatoes are soaking

    • In a small bowl or ramekin, mix 2 tablespoon corn flour, 1 teaspoon garlic granules, ¼ teaspoon smoked paprika (or whatever paprika you have, I reckon I'd try ½ teaspoon next time), salt and pepper to taste, a nice drink for you (well, you might as well!)

    Let's air fry

    • Drain and pat dry the potatoes with a clean tea towel and add to a large mixing bowl to coat with the mix you've prepared then mix in 2 tablespoon olive oil. Go on, get your hands dirty and mix really well so everything is well coated.
    • Place prepared sweet potatoes in the air fryer basket.
    • Press Air Fry, programme 12 minutes at 180°C / 355ºF. Lift and shake the basket (grab silicone gloves to protect your fingers) when the pot says to turn food half way.
    • When it finishes give them another shake and press Air Fry 204°C / 400ºF for 8 minutes with the shake in the middle when it says to turn food. Serve immediately, what will you eat them with?

      Do you have to use corn flour or can u use regular flour?

        Hi Marie, When I tried the Sweet Potato Fries with regular flour, it didn't work as well as with corn flour. Hope that helps, Maria

        Im in America and corn flour is called cornstarch here.

      Hi there,
      These were delicious. My first recipe in my instant pot duo crisp and air fryer!

      I really would like to make these in advance so can I freeze these and cook them up later, or would you cut them up and then defrost and cook as per method above?

      Any other exceptional vegetarian recipes - please ping them my way.
      I make dhal, risotto, vegetarian tagine, soups in instant pot but any others would be gratefully received. I am in a bit of a cooking rut.

        Hi Shahira, thank you for your lovely comments. I've never tried them from frozen, but you could perhaps treat them like frozen oven chips and have them all seasoned and ready to go from raw. Definitely worth a try.

      When you say corn flour, do you mean corn starch? I heard in different parts of the world it may mean different things.

        I believe that what we call corn flour in the UK may indeed be called corn starch in other countries like the United States

      hi i need to make more than 500g of sweet potato fries, i have the instant pot duo crisp, is it ok to overlap them in the basket? or do i have to do them in batches?

        Hi Gemma, what I would do is do them straight in the inner pot without the basket.

        I've been doing this more and more for dishes and it works really well. Make sure you shake them a few times though.

        I recommend adding a bit of oil to the bottom of the inner pot and brushing it around to cover the bottom first (I use a silicone brush). You'll only need a little drop of oil.
